Sprouting?

I am trying to get into growing these and I need a few pointers.
Has anyone sprouted mung beans?
Can I keep them growing in water the whole time or not?
What are your favorite sprouts to eat?

I've never sprouted but I believe you're supposed to keep them in the water until you see the sprouts. :)
