Marti has instructed me that I need to drastically cut back on my carbs/grains to help with inflammation problems I'm having. I really am looking for ideas/suggestions/recommendations? I currently have oatmeal or granola on my yogurt for breakfast and my lunches are homemade soups (with beans or lentils), chili and spaghetti (non-wheat noodles with spaghetti squash) that I bring to work frozen and reheat here. For snacks I take granola bars but often times don't eat those although before leaving work I will eat two organic brown rice cakes with 2T of non-peanut nut butter and a T of fruit spread (no sugar added).

Hi Michelle! I hate to say it, but you are eating alot of grains. Personally, I think the non-wheat noodles are fine but they might be high in carbs. I will tell you how my typical day of eating goes and maybe that will help you with some ideas:

Breakfast is hardboiled eggs, sausage and squash (I eat it cut up raw with salt and pepper).

A snack is an Atkins protein bar (something Marti would prefer I not eat because it is processed and can cause bloating but I like them). A sustitute would be a natural whole nut bar. I also have yogurt with a teaspoon of flax meal.

Lunch (or another snack) is lean meat rolled up with cheese (I have 4 of those usually) and green salad with romaine lettuce, celery, peppers, cucumber, avocados and some form of protein such as chicken.

For an afternoon snack I will have cottage cheese with kiwi fruit.

If I'm really hungry, I'll have some nuts but not alot.

For dinner, it can be just about anything low carb, steak with broccoli, breadless pizza. Dinner is the only time I will have a piece of low carb bread or low carb tortilla. There are a lot of low carb cookbooks out there and Marti may have told you about the No Grain Diet cookbook as well. The Food Network has a lowcarb show with Gorge Stella and he makes some good stuff. I think he has a cookbook or 2 out there as well.
