View Full Version : Dill Refrigerator Pickles

I'm not sure this is the right place for this, maybe it should be in Anything Goes, but what are you making/eating with all the fresh summer foods? (...your garden, the store or a local market.)

Here is one of my summer favorites: Dill Refrigerator Pickles

1 3/4 C white vinegar
3 1/2 C water
~ 1/4 C sugar - maybe slightly less
1/4 C salt
Dill Seed - to taste (...I start with ~2-3 tsp.)
garlic cloves - to taste (...usually 1 works for me)
Hot peppers, chopped w/o seeds - to taste (...I usually use about 1/2 - 1)
cucumbers - sliced or quartered...however you like them.

Mix ingredients together in a large bowl with a lid. Add cucumbers. Cover tightly. Soak and store in the refrigerator for 1-3 days...then eat. (I make both quarters and slices bcz I love the slices on sandwiches with tomato and lettuce.)

So I wouldn't call it amazing, rather ordinary, but very tasty! :) ...and much easier than the processing my mom used to do. To me, that is the amazing part.

Ginger, those sound yummy and pretty easy. I'll have to give them a try; I am a pickle addict!:p

This is the only way I like to eat cucumbers, except the recipe handed down to me from mom & gramma uses just a few ingredients.

In a bowl combine 1 part vinegar to 3 parts water. Then, add any salt & pepper to taste. Add your dill seed to taste. Cut up one onion, but not chopped. You want the individual rings of onions in there. Cut up as many cucumbers as will fit in that bowl of vinegar & other ingredients. Refrigerate 24 - 48 hours. You can taste the cucumbers as they marinate to see if you want to add anything to the bowl for flavor.

Voila'. Refrigerator pickles.

Thanks Lisa. That sounds similar to one my grandma uses too. I love almost everything my grandma makes. She is a wonderful cook! ...and the most wonderful woman. :D

...so what else are you all making/growing? If the blueberries and black raspberries are able to survive our house for more than a few hours w/o being eaten, we'll make smoothies. We can't go wrong either way bcz we all love blueberries! If my dd can hide them from us, she makes pies, but usually the poor little berries don't survive once they've been washed.

...Oh and you see the size and number of pumpkins we've got this year!
